A Madras Biriyani · by Samam Foods

Madras biriyani, the honest way.

The recipe

Twenty-four tries to get it right.

Our signature biriyani took 24 rounds of trial and error before we were happy to serve it. Twenty-three times, it wasn’t quite there. The twenty-fourth is the biriyani we serve today.

Try 24: the one we serve.
